Artichoke Squares

  • 2 jars (6 oz.) marinated artichoke hearts
  • 1 sm. onion, finely chopped
  • 1 clove garlic, minced
  • 4 eggs
  • 1/4 cup fine dry bread crumbs
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1/8 tsp. oregano leaves
  • 1/8 tsp. Tabasco sauce
  • 1/2 lb. sharp cheddar cheese, shredded
  • 2 Tbsp. minced parsley

Drain marinade from 1 jar of artichokes into a 7 x 11 inch baking dish. Drain other jar, and discard oil or save for other purposes. Chop artichokes; set aside. Add onion and garlic to dish and microwave, uncovered, on HIGH for 4 minutes or until onion is limp, stirring once or twice.

In a bowl, beat eggs slightly; add crumbs and spices. Stir in cheese, parsley, and artichokes. Pour mixture into baking dish with onions and mix together. Microwave, uncovered, on HIGH for 10 to 12 minutes or until set in center when lightly touched. Turn dish several times while cooking. Let cool in dish for 10 minutes; cut into 1 inch squares. Serve warm or at room temperature.
