Fresh Cranberry Bread

- 2 c. sifted all-purpose flour
- 1 c. sugar
- 1 1/2 tsp. baking powder
- 1/2 tsp. soda
- 1 tsp. salt
- Juice and grated rind of 1 orange
- 2 Tbsp. melted shortening
- 1 egg, well beaten
- 2 c. fresh cranberries, halved
- Nuts may be added
Sift together flour, baking powder, sugar, soda, and salt. Combine orange juice, grated rind, melted shortening and enough water to make 3/4 cup juice; then stir in beaten egg. Pour this mixture into dry ingredients, mixing just enough to dampen. Fold in halved cranberries and nuts. Spoon into greased loaf pan (9x5x3-inches) spreading evenly, making corners and sides slightly higher then center. Bake at 350 degrees 50 or 60 minutes. Remove from pan. Cool. Store overnight for easier slicing.
