Filled Snack Stick (Kapaa 11 U.E. Club)
Kapaa II U.E. Club
- 1 packet dry yeast
- 1/4 c. warm water
- 1/4 c. mashed potato flakes
- 2 tbsp. sugar
- 2 tbsp. butter or oil
- 1 1/2 tsp. salt
- 1 c. scalded milk
- 2 eggs
- 3-3 1/2 c. flour
- 2 (12 oz.) cans Spam
- sesame or poppy seeds
Soften yeast in water. Combine potato flakes, sugar, butter, salt and milk. Cool to lukewarm. Add 1 egg, 1 yolk and yeast. Gradually add flour to form stiff dough. Knead on floured surface until satiny, 5-7 minutes. Place in a greased bowl. Cover; let rise in warm place until doubled, 1-1 1/2 hours. Cut each can of Spam into 6 slices, then cut each slice into 4 strips. Roll half of dough on floured surface to 14×12″ rectangle. Cut in half crosswise. Cut each half into 6 strips. Top each with 2 strips Spam. Moisten edges. Fold sides to center; seal. Place, seam side down, on greased cookie sheets. Brush with beaten egg white. Sprinkle with seeds. Repeat with remaining dough. Let rise until light, 15-30 minutes. Bake at 450 degrees for 12-15 minutes. Makes 24.
