Applesauce Nut Bread

  • 2-1/2 cups biscuit mix
  • 1 cup uncooked rolled oats
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1 egg
  • 1 cup honey
  • 1 cup Gravenstein applesauce
  • 1 cup gold raisins
  • 1 cup coarsely chopped walnuts

Combine biscuit mix with oats, salt, and baking powder. Beat egg slightly; add honey and applesauce. Beat quickly into biscuit mix. Stir in raisins and nuts. Pour batter into 9x5x3-inch lined, greased loaf pan. Let stand 10 minutes before baking to keep fruit and nuts from sinking to bottom. Bake at 350 degrees 60-70 minutes or until done in center when tested. Cool in pan 10 minutes before removing to rack. Bread will slice better on second day.

Yield: 1 loaf

NOTE: This freezes well.
