Chocolate Mochi

  • 2 cups mochiko
  • 1 3/4 cups sugar
  • 3 Tbsp. powdered cocoa
  • 1 Tbsp. baking soda
  • 1 can (12 oz.) coconut milk
  • 1 can (12 oz.) evaporated milk
  • 2 eggs, beaten
  • 1/4 cup (1/2 block) margarine or butter, melted

Combine dry ingredients in a bowl. Add remaining ingredients to mochiko mixture; mix well. Bake in greased 9×13 pan at 350° for 1 hour. Cool before cutting with a plastic knife. Finished product resembles brownies.
