Jello Mochi
- 2 pkgs. (10 oz.) mochiko
- 2 pkgs. (3 oz.) strawberry, orange or lemon jello
- 2 cups sugar
- 3 tsp. baking powder
- 2 cans unchilled soda, strawberry, orange or lemon
- 3 eggs, beaten
- 1/2 cup (1 block) butter, melted
- Potato starch (katakuriko) or kinako
Combine mochiko, jello, sugar and baking powder. Stir in unchilled soda. Add eggs and butter. Bake in slightly greased 9×13 pan at 350° for 1 hour. Cool; slice and roll in kinako or katakuriko.
