Carrot Bread
- 2 c flour
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 1/2 tsp. salt
- 1/4 c nuts
- 1 c Wesson oil
- 1 tsp. vanilla
- 1 1/2 c sugar
- 2 c grated carrots (finely)
- 3 eggs
- Opt: 1 c raisins or 1/2 c coconut and 1/2 c raisins
Sift flour, salt, soda, and cinnamon together. Make a well in the dry ingredient mixture (in mixing bowl) and add nuts, oil, vanilla, sugar, carrots, and opt. raisins or coconut, if desired. Pour into well greased 9x5x3 loaf pan. Let it stand about 20 minutes before baking.
Bake at 350° for 1 hour. Cool before slicing to prevent crumbling.
