Carrot Bread

Waiole Tea House

  • 2 c. flour
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1/2 c. nut meats
  • 1/2 tsp. salt
  • 1 1/2 c. sugar
  • 1 c. Wesson oil
  • 1 tsp. vanilla
  • 2 c. grated carrots
  • 3 eggs
  • Optional: 1 c. raisins or 1/2 c. coconut and 1/2 c. raisins

Sift flour, salt, soda, cinnamon together. Make a well in a dry ingredients, add nuts, oil, vanilla, sugar, carrots, eggs and raisins. Mix well. Bake in well-greased 9x5x3-inch pan (loaf). Let stand for about 10 or 15 minutes (not really necessary). Bake at 350 degrees 1 hour.

Note: Sweet potatoes may be used instead of, or in place of, carrots.
