Beet Jelly
- 2 bunches of beets
- 2 pkg. raspberry flavored drink base
- 2 pkg. dry pectin
- ½ cup lemon juice
- 6 cups sugar
Scrub beets thoroughly and peel off the rough part near the tops. Do not peel entire beet. Cut up beets, including parts of the tops. Cover with water and cook till very tender. Strain juice through cloth.
To 4 cups of juice, add the kool-ade, pectin and lemon juice. Bring to a boil. Add the sugar and bring to a boil, cooking till jelly sheets off spoon (about 4 minutes).
Cool, skim and pour into sterile jars and seal immediately.
