Passion Fruit Jelly
- 3¼ cups sugar
- 1 cup water
- ¾ cup fresh passion fruit juice
- ½ bottle fruit pectin
Combine sugar and water and bring to a bubbling boil. Stir constantly for one minute. Remove from heat. Stir in fruit pectin. Add passion fruit juice and mix well. Pour into jelly glasses or jars and cover with paraffin at once.
Yield: approximately 4 to 5, 8-ounce glasses.
