Mandarin Kanten

  • 1 can Mandarin oranges
  • 1 cup Mandarin orange juice
  • 2 sticks white kanten
  • 3 cups water
  • 1 cup sugar
  • 1/4 tsp. peppermint extract
  • Red food coloring

Drain Mandarin oranges reserving juice; mash oranges. Add water to juice to make 1 cup of liquid. Rinse kanten, break into small pieces and soak in water for 30 minutes. Cook until kanten is dissolved. Add flavoring and food coloring. (Dip a chopstick in food coloring and stir into kanten until desired tint is obtained.) Add mashed oranges. Pour into 8″ x 8″ pan and chill in until set. Cut into desired shapes.
