Fruit-A-Bobs

  • 14 oz. can pineapple chunks
  • ¼ tsp. mint extract
  • 1½ tbsp. finely chopped mint leaves
  • 6 maraschino cherries
  • 1 tbsp. lime juice
  • 1 large papaya
  • 1 large banana

Drain pineapple; reserve the juice. Add mint extract, chopped mint leaves and lime juice to the reserved pineapple juice. Cut peeled banana and papaya into 1 inch chunks. Marinate fruit for 5 minutes; place on toothpicks. Serves 4. Serve chilled as an appetizer.
