Fortune Cookies

  • 1 egg
  • 1/3 cup sugar
  • 2 tablespoons corn oil
  • 2 tablespoons water
  • 1/4 cup cornstarch

Beat egg with rotary beater until fluffy. Beat in sugar a little at a time; continue beating until light yellow and thick. Fold in oil. Blend water and a little egg mixture into cornstarch; then blend together. Heat a heavy ungreased griddle. (If electric griddle set at 350 degrees.) Keep heat low and drop mixture by heaping tablespoons on griddle. Spread to 4 inches wide and 1/8 inch thick with back of spoon. Cook until edges brown and cookies are easily lifted with a spatula (if it sticks cook a little longer). Turn each cooky carefully. Cook on other side. Immediately place fortune paper on each cookie then fold each of the two edges to center (paper inside) and bend in half across fold keeping folded edges on the outside. Makes 12.
