Pumpkin Pie

Diane Dutton Keliipio, Class of 1962

  • 1 cup pumpkin
  • 1 cup sugar
  • 1 tsp vanilla
  • 1/2 tsp cinnamon
  • 2 eggs, separated
  • 1-1/2 cups milk
  • 1 Tbsp cornstarch
  • Pinch of salt

Mix ingredients together until smooth. Beat egg whites until stiff. Fold into the mixture; pour into pie shell. Bake at 450 degrees for 10 minutes. Reduce heat to 375 degrees, bake 10 minutes more. Reduce heat to 350 degrees and bake until brown and knife comes out clean in testing.
