Lumpia Pasas (Friend with Raisins)

  • 1 tbsp. salad oil
  • 3 cloves garlic, minced
  • 1 onion, minced
  • 2 tomatoes, chopped
  • ½ cup chopped pork
  • ½ cup chopped ham
  • 1 cup chopped beef
  • ½ bay leaf
  • 1 tbsp. chopped pimiento
  • ½ cup water
  • ½ tsp. salt
  • ½ cup cooked garbanzo beans
  • 1 cup raisins
  • 2 hard cooked eggs, chopped
  • Deep fat for frying
  • 24 Lumpia wrappers (below)

Heat oil in saucepan. Saute garlic and onion. Stir tomatoes, pork, ham, beef, bay leaf, pimiento and water. Cover and simmer until meat is tender. Stir in Garbanzo beans and raisins; cool.

Add eggs before filling wrappers. Heat deep fat to 375 degrees F. Put 1 to 2 tablespoons of filling about 2 inches from the nearest edge of each wrapper. Fold edge of wrapper over filling. Fold right and left sides toward center to completely enclose filling in envelope fashion. Roll toward open end, moistening edge with water to seal. Fry in deep fat until lightly browned. Serve with dipping sauce if desired. Makes 24 Lumpia.
