Delicious Rice Pudding

  • 1/2 cup rice
  • 2 cups milk
  • 1/4 teaspoon salt
  • 1/2 cup raisins, optional
  • 2 cups milk
  • 2 eggs, separated
  • 1/2 cup sugar
  • 1/4 teaspoon cinnamon
  • 1 teaspoon vanilla

Cook 2 cups of milk and 1/2 cup rice seasoned with 1/4 teaspoon salt over hot water for 45 minutes. (If you desire raisins, add last half hour.) Stir in 2 cups of milk, which has been combined with the 2 slightly beaten egg yolks, sugar, cinnamon, and vanilla. Cook five minutes stirring occasionally. Take from the stove and carefully fold in the 2 stiffly beaten egg whites. Pour into a casserole and bake 30 minutes in a 350-degree oven. Delicious either warm or cold.
