Yokan

  • 2 sticks kanten
  • 1-1/2 c water
  • 1 c sugar (more for sweeter kanten)
  • 2-1/2 c cooked azuki

Tear kanten sticks into small pieces and soak in water until soft (about 1 hour). Cook over medium heat till dissolved, stirring constantly. Add sugar and cook another 10 minutes. Add azuki and cook until beans are heated thoroughly. Pour into pan and chill.
