Velvet Crumb Cake

  • 1 1/2 c. biscuit mix
  • 1/2 c. sugar
  • 1 egg
  • 1/2 c. milk or water
  • 2 tbsp. shortening
  • 1 tsp. vanilla

Preheat oven to 350 degrees. Grease and flour an 8″ square pan. Blend all ingredients on low speed until moistened; scrape sides and bottom of bowl frequently. Beat 4 minutes at medium speed. Pour into prepared pan; bake 25-30 minutes or until cake tests done. Spread with Broiled Topping.

Broiled Topping:

  • 3 tbsp. soft butter
  • 1/3 c. firmly packed brown sugar
  • 2 tbsp. light cream
  • 1/2 c. flaked coconut
  • 1/4 c. chopped nuts

Mix ingredients and spread on cake; broil at least 3″ from heat about 3 minutes or until nicely browned. Cut into serving pieces.

Or cake mixture can be used for pineapple upside down cake.
