Sea Foam Frosting

  • 1 cup white sugar
  • 1/2 cup brown sugar
  • 1/4 cup Karo Syrup
  • 6 tablespoons strong liquid coffee
  • 2 egg whites
  • Pinch of salt

Boil together sugars, syrup, salt, water, and coffee without stirring until syrup spins a very long thread (248 degrees if a thermometer is used). Remove from fire immediately. Beat egg whites until stiff; add syrup slowly, beating it well. Continue to beat until mixture is cold and thick enough to hold its shape. Spread between layers and on top and sides of cake.
