Sai Soo Gai (Chinese Chicken Salad)
- ½ lb. white chicken meat, cooked and shredded
- 2 oz. Sai Fon (bean thread) or Chinese long rice, deep fried until light brown
- 1 small head of lettuce, shredded
- 4 strands green onion, shredded
- 2 tbsp. sesame seeds, toasted
- 2 tbsp. chopped toasted almonds (optional)
- 2 tbsp. sugar
- 1 tsp. salt
- 1 tsp. MSG
- ½ tsp. black pepper
- ½ cup salad oil
- 3 tbsp. vinegar
Combine ingredients and mix just before serving.
