Sai Soo Gai (Chinese Chicken Salad)

  • ½ lb. white chicken meat, cooked and shredded
  • 2 oz. Sai Fon (bean thread) or Chinese long rice, deep fried until light brown
  • 1 small head of lettuce, shredded
  • 4 strands green onion, shredded
  • 2 tbsp. sesame seeds, toasted
  • 2 tbsp. chopped toasted almonds (optional)
  • 2 tbsp. sugar
  • 1 tsp. salt
  • 1 tsp. MSG
  • ½ tsp. black pepper
  • ½ cup salad oil
  • 3 tbsp. vinegar

Combine ingredients and mix just before serving.
