Rice Pudding

  • 1 cup water
  • 3/4 cup long grained rice
  • 1 qt. milk

Put all together in a pan and let par boil. Simmer slowly for about 1 hour until almost all the milk is evaporated. Stir every 10 minutes. Be sure the heat is very low.

Then beat 1 egg until foamy. Add 1 cup sugar, add ½ cup milk and 1 tsp. vanilla. Add a few T. of the hot rice mixture to the above then pour everything back into the hot rice.

Let come to a boil.

Pour into a baking dish, let set. Sprinkle with cinnamon and refrigerate.
