Refrigerator Cookies II
Mrs. Gloria Pilapil – Kapehu
- 6 c sifted allpurpose flour
- ¼ tsp salt
- ½ tsp baking soda
- 1½ c margarine
- ½ c sugar, white or brown
- 1 c Karo syrup
- 1 c chopped nuts
Mix and sift together first 3 ingredients. Beat margarine until soft and creamy. Add sugar and Karo syrup and beat until thoroughly blended. Add nut meats. Add sifted dry ingredients, and add all at once, mixing with hand until stiff dough is formed.
Shape into 3 rolls about 2 inches in diameter. Wrap in waxpaper and chill in refrigerator 3 – 4 hours or until firm enough to slice. With a very sharp knife, cut in thin slices. Place on ungreased cooky sheet. Bake in hot oven, 400° F. for 8 – 10 minutes. Makes 9 dozens.
To make coconut cookies: Use 1 c shredded coconut instead of chopped nuts.
To make chocolate cookies: Add 3 squares melted chocolate or 2/3 C cocoa before adding flour mixture.
