Queen Elizabeth Cake

  • 1 cup chopped dates
  • 1 tsp. baking soda
  • 1 cup boiling water
  • ¼ cup butter
  • ¾ cup sugar
  • 1 egg, beaten
  • 1 tsp. vanilla
  • 1½ cup sifted flour
  • ½ tsp. salt
  • 1 tsp. baking powder
  • ½ cup nuts
  • ½ cup coconut

Pour boiling water over the chopped dates and baking soda in a bowl. Let stand while mixing other ingredients.
Cream butter and sugar, add egg and vanilla.
Sift dry ingredients. Add to creamed sugar and butter with the soaked dates. Fold in nuts and coconut.
Pour into greased 9×12 inch pan. Bake for 35 minutes at 350 degrees.

Icing:

  • 5 tbsp. brown sugar
  • 2 tbsp. butter
  • 5 tbsp. cream
  • ½ cup nuts
  • ½ cup coconut

Boil together for 3 minutes and spread over cake and sprinkle with coconut and nuts.
