Pine-Apple Cup Cakes
- 1 – No. 2 can crushed pineapple
- 1 – No. 2 can applesauce or apple pie filling, peach pie filling or fruit cocktail
- 1-¾ cup to 2 cup sugar
- 2 tsp. salt
- 4 cup flour
- 1 tbsp. baking soda
- 4 large eggs
- 2 tsp. vanilla
- 1 to 1 1/3 cup corn oil
- 1 cup chopped walnuts
Beat well and add to above ingredients and blend well.
Scoop into cup cake cups with ice cream scoop and bake 20 minutes at 350 degrees F. When done prick with fork and brush with following topping:
Sour Cream Topping:
- 1 cup sour cream
- ½ cup sugar
- ½ tsp. salt
- ½ tsp. baking soda
Heat to boiling and remove from fire.
