Portuguese Style Codfish Gravy

- 1 Tbsp. vegetable oil
- 1 clove garlic, minced and crushed
- 1 large round onion, chopped
- 2 pkg. Mums brand codfish
- Pinch of pepper
- 1 can (No. 303) stewed tomatoes
- 1/4 cup Portuguese parsley,* coarsely chopped (can substitute American parsley)
Heat oil in pan. Saute garlic and onions. Add codfish, pepper, tomatoes, and parsley. Heat to boil. Pour on rice.
