Pineapple Upside-Down Cake
- 2 tablespoons melted butter
- 3/4 cup brown sugar
- 5 rings sliced pineapple
- 2 eggs, well-beaten
- 1 cup sugar
- 1 cup flour
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1/2 cup boiling water
- 1 teaspoon vanilla
Place the butter and brown sugar in a 10-inch cast iron fry pan. Arrange the pineapple rings on top. To the well beaten eggs add the cup of sugar and stir well. Add the sifted dry ingredients. Add 1/2 cup hot water and beat 1/2 minute. Add vanilla and pour batter over pineapple in frying pan. Bake at 375 degrees about 25 minutes or until done. Turn out on cake plate while still hot. Serve with whipped cream.
