Pineapple Cream Pudding

  • ¼ c drained, crushed pineapple
  • ¾ c pineapple juice
  • 24 quartered marshmallows
  • 1½ pkgs. vanilla pudding powder
  • 1½ c evaporated milk
  • ¾ c water

Mix pineapple, juice and marshmallows and chill. Place in saucepan pudding powder and stir in slowly mixture of evaporated milk and water. Bring to a boil, stirring constantly. Cook slowly and stir 30 seconds. Cover and chill. Fold in pineapple mixture. Put into large serving dish or 6 individual serving dishes. Keep chilled until serving time. If desired, garnish with slices of maraschino cherries. Serves 6.
