Pickled Mangoes

  • 1/2 gallon green mangoes, peeled and sliced
  • 2 c. white sugar
  • 1 c. vinegar, distilled
  • 4 Tbsp. Hawaiian or rock salt
  • 1 pkg. sweet Li Hing Mui

Bring sugar, salt and vinegar to boil. Cool. Add to mango slices. Add Li Hing Mui seeds. Pack in jars and refrigerate.
