Pickled Daikon (Takuwan)

- 3 daikon chopped lengthwise, ¼ x ½ x 2″
- ¼ c Hawaiian salt
- ½ c vinegar
- ½ c sugar
- 1 T ajinomoto
- Yellow food coloring
Cut daikon, soak overnight and drain. Add all other ingredients and rub it in (lomi) well. One chili pepper can be added, if desired. Pack in jars and keep in refrigerator.
