Peanut Butter Honey Coffee Cake

  • 2 cups biscuit mix
  • 2 Tbsp granulated sugar
  • 1 slightly beaten egg
  • 2/3 cup milk
  • 1/4 cup honey
  • 1/4 cup creamy peanut butter
  • 1/2 cup brown sugar
  • 1/2 cup biscuit mix
  • 1/4 cup chopped peanuts
  • 2 Tbsp butter or margarine
  • 2 Tbsp creamy peanut butter
  • 1/2 tsp ground cinnamon

In large mixer bowl, combine the 2 cups biscuit mix and the granulated sugar; add beaten egg and milk. Blend in honey and the 1/4 cup peanut butter (mixture will not be smooth). Turn into greased 9x9x2-inch baking pan. Combine brown sugar, the remaining biscuit mix, the peanuts, butter, the remaining peanut butter and the cinnamon until crumbly; sprinkle atop batter. Bake in 400 degree oven 20-25 minutes or till cake is done. Cool and cut into squares.
