Papaya Bread

  • 1 cup sugar
  • 1/2 cup butter
  • 2 eggs
  • 1 cup mashed papaya
  • 1/4 cup chopped walnuts
  • 1/2 cup raisins
  • 1-1/2 cups flour
  • 1/4 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 tsp allspice
  • 1/2 tsp ginger
  • 1 tsp baking soda

Cream sugar, butter until light; add eggs and beat until fluffy. Add papaya, nuts and raisins. Mix. Sift dry ingredients together and add to mixture. Pour into a paper-lined loaf pan. Bake at 325 degrees for 50 minutes.

This may also be baked in muffin pan. Reduce baking time to 25 minutes.

Yield: 1 loaf
