Okinawan Pork Soup

Mrs. Sally Shimabukuro, Bito Doshi Kai

Serves: 6

  • 1 pkg. pig’s feet (2)
  • ½ chicken, roaster or fryer, cut in pieces
  • 2 strips nishime konbu soaked, washed, tied in knots, and cut in pieces
  • 2 turnips, diced into one inch pieces
  • ½ round onion, chopped
  • 1 clove garlic, chopped small
  • 2 tsp. Hawaiian salt
  • 2 Tbsp. miso
  • 1 Tbsp. ginger, grated

Singe pig’s feet directly over stove flame. Wash and simmer. Add onions, salt, ginger, garlic, and simmer 3 hours. Add chicken, konbu, turnips and cook for 30 minutes. Always have enough liquid to cover. Cook for another 30-45 minutes. Add miso just before soup is served.
