Molded Tofu and Pineapple Salad

  • 2 pkgs. lime gelatin
  • 1 cup crushed pineapple (well drained)
  • 1 cup mashed tofu
  • ½ cup mayonnaise
  • ¼ cup chopped pecans or walnuts

Drain pineapple thoroughly. Squeeze all the water you can from fresh tofu. Mix pineapple, tofu, mayonnaise and chopped pecans. Make gelatin according to directions, using pineapple juice as part of the water. Use ½ cup less liquid than required. Add pineapple-tofu mixture to gelatin. Mix thoroughly and mold in large mold or individual molds. Serve with favorite dressing (use 1½ quart mold or 12 ½ cup molds.
