Microwave Onion-Miso Soup

  • 1/2 packet dashinomoto (packaged soup base)
  • 2 cups water
  • 1/4 to 1/2 carrot, grated
  • 1/2 to 1 whole 3″ round onion, sliced
  • 1 rounded tsp. miso (soybean paste)
  • Croutons, onion-flavored bagel, or bread
  • Hard cheese

Dissolve dashinomoto in water (use ceramic or microwave bowl). Add grated carrots and sliced onions. Cook in microwave (high setting) for 3 minutes (until onion is translucent).

Mix in rounded teaspoon of miso. Float 1/2 onion-flavored bagel (or any crusty, hard, even stale bread) on top of soup. Slice any hard cheese to cover bagel. Microwave again for 15 to 30 seconds to melt cheese. Serve.
