Marshmallows
- 2 Tbsp. or pkg. gelatin
- 1 1/4 c. water
- salt
- 2 c. sugar
- 1 Tbsp. vanilla
- coloring
Soak gelatin in 1/2 c. cold water. In a pot, cook 3/4 c. water and sugar until the syrup spins a thread (like the jelly test). Add soaked gelatin and let it cool awhile. Add salt and beat with a rotary beater until creamy and thoroughly thick. Add vanilla and coloring. Continue beating until it holds its shape. Pour in a buttered and (powdered) sugar sprinkled 8 x 8 pan. Chill in refrigerator until firm. Cut in squares and sprinkle each piece with powdered sugar.
