Mango Bread

Rose Marie Fontes Alfonso, Class of 1963

  • 2 cups sifted flour
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 1/2 tsp salt
  • 3/4 cup salad oil (Crisco, etc.)
  • 1-1/2 cups sugar
  • 2 cups diced ripe mangoes
  • 1 tsp vanilla
  • 3 large eggs, beaten
  • 1/2 cup raisins
  • 1/2 cup walnuts

Mix all the ingredients together. Oil and line loaf pans with waxed paper. Leave all ingredients in pan for 20 minutes before baking. Bake for 1 hour and 10 minutes at 350 degrees.

Yield: 4 loaf-size pans
