Mammon

  • 2 cups cake flour
  • 2 tsp. baking powder
  • ½ cup margarine
  • ½ tsp. salt
  • 1 cup sugar
  • 3 eggs, separated
  • ½ cup milk
  • 1 tsp. vanilla

Sift flour, measure. Add baking powder, salt. Sift again three times. Cream margarine, add sugar gradually. Cream together until light and fluffy. Add egg yolks beating well after each. Add flour alternately with milk. Beat well after each addition. Add vanilla.

Beat egg whites stiff to stand in peaks, but still moist. Fold whites into the mixture. Spoon into paper cups one-third full. Bake in moderate oven (350 degrees F.) for about 20 minutes. Dust with sugar. Makes 12 delicious “mammones”.
