Lentil Soup

  • 2 qts. beef or chicken broth
  • 2 cups lentils
  • 1 pork bone (use pig’s feet)
  • 1 cup chopped celery
  • 1 cup chopped carrot
  • 1 cup chopped onion
  • 1 orange, sliced through the center with the rind
  • ½ lb. linguiça, fried

Boil the broth, lentils and pork bone for 1 hour. Add all the rest of the ingredients and cook on low for 30 minutes. When serving remove the orange. If you desire, you may add to the soup, a half cup of dry white wine. For 6 persons.
