Lemon Oatmeal Rounds

  • 1 cup margarine
  • 2 cups firmly packed brown sugar
  • 3 tbsp. lemon juice
  • 2 tsp. lemon peel
  • 2 eggs
  • 2 cups flour (regular, unsifted)
  • 1 tsp. salt
  • 1 tsp. soda
  • 3 cups quick cooking rolled oats
  • 1 cup chopped nuts
  • 1½ cup chopped dates

Cream butter and sugar until smooth. Beat in eggs, lemon peel, and lemon juice. In separate bowl, stir together flour, salt and soda. Add to butter mixture and stir. Then stir in oats, dates and nuts. Drop by teaspoon on ungreased cookie sheet about 2 inches apart. Bake at 350 degrees for about 18 minutes or until dry in center and edges are well browned. Cool on racks. Store in airtight containers. Yield about 4 dozen large cookies.
