Hot Cakes

  • 1 egg, beaten
  • 3/4 c. milk
  • 1 tsp. vanilla
  • 1 c. flour
  • 2 tbsp. sugar
  • 1 1/4 tbsp. baking powder
  • 3 tbsp. butter, not melted

Using a wire whip, whip egg, milk, vanilla, flour, sugar and baking powder until fluffy. Add butter. Pour on hot, buttered skillet. When bubbly on top, turn over. Makes 4 large hot cakes.
