Fig Gelatin Jam
- 3 cup fresh figs
- 3 cup sugar (white)
- 2 pkg. (3 oz.) strawberry gelatin
Peel and mash figs. Mix sugar and gelatin to figs and cook over medium heat until thick (20 min.). Pour into hot sterilized jars and seal. Refrigerate.
Raspberry, blackberry or boisenberry gelatin may also be used.
Mangoes may be used instead of figs, using lemon gelatin.
