Date Bars #2

  • 1 cup sugar
  • 1 cup flour
  • 1 tsp. baking powder
  • ½ tsp. salt
  • 3 eggs, separated
  • 1 tsp. vanilla
  • 2 cups chopped dates (or other chopped fruit)
  • ½ cup finely chopped nuts

Sift dry ingredients together. Beat yolks until thick and lemon-colored. Add vanilla. Add dry ingredients and mix thoroughly. Add fruit and nuts. Fold in stiffly beaten egg whites. Spread about ½ inch thick in a greased baking pan. Bake in a moderately slow oven. When cool, cut in strips and roll in powdered sugar. Temp. 325 degrees about 25 minutes. (30 bars, 3″x¾″x¾″)
