Danish Apple Cake
- 1 box graham crackers, crushed very fine
- 2/3 cup butter, melted
- ½ cup brown or raw sugar
- 1 tsp. cinnamon
- 5 cups apple sauce
- 1 pint whipping cream
- 1 tbsp. powdered sugar
- ½ tsp. vanilla
- Grape or raspberry jelly
In a large frying pan, melt the butter. Add the crushed cracker crumbs and the cinnamon and sugar. Mix well. On a large platter make a layer of the crumb mixture, form into a circle. Pat down firmly. Add 1 cup of apple sauce. Next a layer of crumbs and then applesauce. Continue until all is used up. Have a layer of crumbs for the top. Put into the refrigerator for about six hours. Just before you are ready to serve, whip the cream, add sugar and vanilla. Spread on the sides and top of the cake. Dot, in a circle, with jelly. Serves 12
