Cream of Broccoli Soup
- 1 medium onion, sliced
- 1 medium carrot, sliced
- 1 small stalk celery with leaves, sliced
- 1 clove garlic
- ½ cup water
- 2 cups cooked broccoli, coarsely chopped
- 1 teaspoon salt
- generous pinch of cayenne pepper
- ½ cup cooked macaroni
- 1 cup chicken stock
- ½ cup cream
- sour cream
Simmer, covered, the onion, carrot, celery, garlic, and water for ten minutes. Transfer to container of electric blender; add broccoli, salt, cayenne and macaroni. Cover and turn motor on high. Remove cover and, with motor running, add the stock and the cream. Chill and serve topped with sour cream.
