Coconut Upside Down Cake

- I. ¼ c butter
- 1 c sugar
- 1 coconut (freshly grated)
Melt butter and sugar in large baking pan. Spread on coconut and place pan on low heat until batter is ready, to prevent it from candying.
- II. ½ c shortening
- 1½ c white sugar
- 3 eggs
- 3 c flour
- 4 tsp baking powder
- 1 tsp salt
- 1 c milk
- 1 tsp vanilla
Cream fat and sugar well. Add eggs and beat well. Sift dry ingredients together and add alternately with milk. Add vanilla. Pour over coconut mixture and bake at 375° F. for 45 min. or until done. Serve warm with whipped cream.
