Coconut Puffs
- 2 cups flour
- ½ cup sugar
- 3 tsp. baking powder
- ½ tsp. salt
- ¼ cup salad oil
- 2 eggs, slightly beaten
- 1/3 cup coconut powder
- ½ cup water
Sift together flour, sugar, baking powder and salt. Dissolve coconut powder in ½ cup water to form coconut milk. Combine oil, eggs and coconut milk and add to flour mixture. Mix only till flour mixture is dampended.
Heat oil in pan (enough to coat pan). Drop dough by teaspoonfuls and fry over medium heat. Turn once when cakes puff and are slightly brown.
Yields approximately 2 dozen.
