Coconut Cookies II

Mrs. James Takahashi – Kapehu

  • ¾ c shortening
  • 1¼ c brown sugar
  • 1 egg
  • 1 c dried coconut, grated
  • 2½ c flour
  • 2 tsp baking powder
  • ¼ tsp soda
  • ¼ tsp salt
  • ½ tsp vanilla

Sift dry ingredients. Cream shortening and add sugar and beat well. Add eggs and blend well. Add the dry ingredients. Lastly add the coconut and vanilla.

Form into small balls and place on baking sheet. Press with fork. Bake at 350° F. for 15 minutes or until brown.
