Chinese Pretzels
- ¾ c. flour (unsifted)
- 1 egg
- 1 1/3 c. cornstarch (unsifted)
- ½ c. sugar
- 1 c. water
Mix cornstarch, flour and sugar and gradually add beaten egg and water until a smooth thin paste is made. Heat salad oil in deep frying pan or pot (oil 1 inch deep). Heat oil to about 360× F. Heat rosette iron in hot fat, drain iron and dip into paste up to top of rosette, then place iron again in hot deep fat. Let pretzel drop from iron an brown lightly and turn over to brown other side. Remove from oil and drain on paper towel. Cool and store in airtight can. Makes about 6 doz. pretzels.
