Botamochi

Mrs. K. Sakai – Kurtistown

  • 2 c azuki beans
  • 1 2/3 c brown sugar
  • 1 tsp salt

Cook beans until soft, adding water only as needed. (Cooks faster if soaked couple of hours or overnight). Drain if there is much excess water. Add sugar and salt. Cook over medium flame stirring occasionally for about 15-20 minutes or until thick. Remove from fire and cool.

Meanwhile cook 2¾ c mochi rice with ½ c plain rice as usual. Mash lightly and form into small balls. Coat with the beans mixture. Serve warm or cold. Makes about 20 balls.
