Banana Cake I

Mrs. R. Miyasaki – Kawailani

  • 2 c sifted cake flour
  • 1 tsp baking powder
  • 1 1/2 tsp baking soda
  • 3/4 tsp salt
  • 1 1/3 c sugar
  • 1/2 c chopped nuts
  • 1/2 c shortening
  • 1/2 c sour milk
  • 1 tsp vanilla
  • 1 c mashed bananas
  • 2 eggs, separated

Cream shortening. Add egg yolks and beat well. Add sifted dry ingredients alternately with milk and bananas. Add chopped nuts and fold in stiffly beaten egg whites. Bake in moderate oven at 350° F for 40 minutes.
